Ripasso Una Volta Sola
Valpolicella Ripasso D.O.C.
Corvinone 50%, Corvina 30%, Rondinella 10%
The Valpolicella Ripasso ‘Una volta sola’ is produced following the historic method, summed up in the local dialect expression “’na olta sola a la vecia maniera”(a single time, the original way). It is obtained by re-passing a light Valpolicella over the Amarone pomace in a 1:1 ratio. It retains the cherry notes and easy drinkability of Valpolicella, while also expressing the complex hints of chocolate and spices typical of Amarone. The grapes come from the vineyards surrounding Villa Pellegrini in Romagnano, in Valpantena, a cooler valley than the others, characterized by significant temperature variations and influenced by the Lessini Mountains. The label shows the Villa and the dolphin fountain found in its gardens.
